  • 9 lasagna noodles
  • 2 cups of ricotta cheese
  • 1 cup of grated mozzarella cheese
  • 1 cup of grated Parmesan cheese
  • 2 cups of fresh spinach, chopped
  • 1 cup of zucchini, thinly sliced
  • 1 cup of mushrooms, sliced
  • 1 cup of bell peppers, diced

  6. Place three lasagna noodles on top of the sauce.
  7. Spread half of the ricotta mixture over the noodles.
  8. Add half of the sautéed vegetables on top of the ricotta mixture.
  9. Repeat the layers: marinara sauce, three noodles, remaining ricotta mixture, and remaining sautéed vegetables.
  10. Top with the remaining mozzarella and Parmesan cheeses.
  11. Cover the baking dish with foil and bake for 25 minutes.
  12. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
  13. Let it cool for a few minutes, then slice and serve your Vegetable Lasagna, the ultimate comfort food elevated!
