Ingredients

  • 1 1/2 cups of cashews, soaked and drained
  • 1 cup of strawberries, fresh or frozen
  • 1/2 cup of coconut cream
  • 1/4 cup of maple syrup
  • 1/4 cup of coconut oil, melted
  • 1 tsp of vanilla extract
  • A pinch of salt
  • 1 cup of almond flour
  • 1/4 cup of dates, pitted
  • 1/4 cup of shredded coconut
  • 2 tbsp of agave syrup
  • 1 tbsp of lemon juice

Instructions

  1. Start by preparing the crust. In a food processor, combine almond flour, dates, shredded coconut, agave syrup, and lemon juice. Process until the mixture sticks together.
  2. Press the crust mixture into the bottom of a springform pan and refrigerate while you prepare the filling.
  3. To make the cheesecake filling, blend soaked cashews, strawberries, coconut cream, maple syrup, melted coconut oil, vanilla extract, and a pinch of salt until smooth.
  4. Pour the filling over the crust and smooth it out. Freeze for at least 4 hours or until set.
  5. Before serving, let the cheesecake sit at room temperature for a few minutes and top it with fresh strawberries.
