  • 4 large ripe tomatoes

  1. Start by roasting the tomatoes. Preheat your oven to 400°F (200°C). Cut the tomatoes in half and place them on a baking sheet. Drizzle with olive oil, sprinkle with salt and pepper, and roast for 25-30 minutes until they are soft and slightly caramelized.
  2. In a large pot, melt the butter over medium heat. Add the minced garlic and chopped onion, and sauté until they become translucent.
  3. Once the tomatoes are done roasting, add them to the pot along with any juices from the baking sheet.
  4. Stir in the dried basil and cook for another 2-3 minutes.
  5. Using an immersion blender, blend the mixture until smooth. If you don’t have an immersion blender, you can use a regular blender, but be sure to cool the mixture slightly before blending.
  6. Return the blended soup to the pot and add the heavy cream. Stir well and let it simmer for 5-10 minutes until heated through.
  7. Season with salt and pepper to taste.
  8. Serve hot, garnished with fresh basil leaves.
