Ingredients

  • 1/2 cup grated Gruyère cheese
  • 4 slices cooked ham
  • 1/4 cup chopped fresh chives

Instructions

  1. Start by making the crepe batter. In a blender, combine the flour, eggs, milk, melted butter, salt, and black pepper. Blend until smooth. Let the batter rest for 30 minutes.
  2. Heat a non-stick skillet over medium-high heat. Pour a small amount of batter into the hot skillet and swirl it to coat the bottom evenly. Cook for about 1-2 minutes until the edges start to lift.
  3. Flip the crepe and cook for an additional 1-2 minutes until it’s lightly golden. Remove from the skillet and set aside. Repeat with the remaining batter.
  4. Place a slice of ham and a sprinkle of Gruyère cheese in the center of each crepe. Fold the sides over to create a square packet.
  5. Return the filled crepes to the skillet and cook for another 2 minutes, flipping once, until the cheese is melted and the crepes are heated through.
  6. Sprinkle the crepes with chopped fresh chives and serve hot.
