  • 4 cups of chicken or vegetable broth, heated
  • 1 teaspoon of saffron threads
  • 1 cup of fresh or frozen peas
  • 1/2 cup of grated Manchego cheese
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the chopped onion, garlic, and red bell pepper. Sauté until the vegetables are soft and fragrant.
  2. Stir in the Arborio rice and cook for a few minutes until it becomes translucent.
  3. Pour in the white wine and cook, stirring constantly, until it’s mostly absorbed by the rice.
  4. Dissolve the saffron threads in a small amount of warm broth and add it to the rice mixture. Continue to cook, adding the hot broth one ladle at a time, allowing the liquid to be absorbed before adding more. This should take about 20 minutes, and the rice should be creamy but still slightly firm to the bite.
  5. Stir in the peas and cook for an additional 2-3 minutes until they are heated through.
  6. Remove the skillet from heat, and stir in the grated Manchego cheese. Season with salt and pepper to taste.
  7. Serve hot, garnished with additional saffron threads and a drizzle of olive oil if desired.
