Ingredients

  • 2 cups all-purpose flour
  • 1¾ cups granulated sugar
  • ¾ cup unsweetened cocoa powder
  • 1½ tsp baking powder
  • 1½ tsp baking soda
  • 1 tsp salt
  • 2 large eggs
  • 1 cup buttermilk
  • ½ cup vegetable oil
  • 2 tsp pure vanilla extract
  • 1 cup hot water
  • 8 oz semi-sweet chocolate, chopped
  • 1 cup heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a large mixing bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add the eggs, buttermilk, vegetable oil, and vanilla extract to the dry ingredients. Mix until well combined.
  4. Stir in the hot water until the batter is smooth. The batter will be thin, but that’s okay.
  5. Pour the batter evenly into the prepared pans and bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  6. While the cakes are baking, prepare the chocolate truffle filling. Place the chopped semi-sweet chocolate in a heatproof bowl.
  7. In a small saucepan, heat the heavy cream until it just begins to simmer. Remove from heat and pour it over the chopped chocolate.
  8. Let it sit for a minute, then stir until the chocolate is completely melted and the mixture is smooth. Allow it to cool to room temperature.
  9. Once the cakes have cooled, remove them from the pans and level the tops if necessary. Spread a layer of the chocolate truffle filling on top of one of the cakes.
  10. Place the second cake on top and frost the entire cake with the remaining truffle filling. You can let some of the filling drip down the sides for a beautiful, rustic look.
  11. Chill the cake in the refrigerator for at least 2 hours before serving to allow the truffle filling to set.
