  • 4 boneless, skinless chicken breasts
  • 1 cup cherry tomatoes, halved
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 red onion, thinly sliced
  • 2 cloves garlic, minced
  • 1/4 cup Kalamata olives, pitted
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • Salt and black pepper to taste


  1. Preheat your oven to 375°F (190°C).
  2. In a large ovenproof skillet, heat the olive oil over medium-high heat.
  3. Season the chicken breasts with dried oregano, dried thyme, salt, and black pepper.
  4. Sear the chicken in the skillet for 2-3 minutes on each side until golden brown.
  5. Remove the chicken from the skillet and set it aside.
  6. In the same skillet, add the minced garlic and sauté for 1 minute until fragrant.
  7. Add the sliced bell peppers and red onion to the skillet. Sauté for 5-7 minutes until they start to soften.
  8. Return the seared chicken to the skillet, and add the cherry tomatoes and Kalamata olives.
  9. Transfer the skillet to the preheated oven and bake for 20-25 minutes until the chicken is cooked through.
  10. Sprinkle crumbled feta cheese over the chicken and veggies in the last 5 minutes of baking.
  11. Remove the skillet from the oven, garnish with fresh herbs if desired, and serve hot.
