  • 2 cups of diced carrots
  • 1 cup of chopped celery
  • 1 onion, finely diced
  • 3 cloves of garlic, minced
  • 1 cup of green lentils, rinsed
  • 6 cups of vegetable broth
  • 1 can (14 oz) of diced tomatoes
  • 2 teaspoons of dried thyme
  • 2 teaspoons of paprika
  • Salt and pepper to taste


  1. Heat a large pot over medium heat and add a splash of vegetable broth.

  3. Stir in the lentils, vegetable broth, diced tomatoes, thyme, paprika, salt, and pepper. Bring to a boil.
  4. Reduce heat to low, cover, and simmer for 25-30 minutes or until the lentils are tender.
