Let’s kick off our Flavor Fiesta with a tantalizing dish inspired by the vibrant streets of Mexico:

Taco Al Pastor

  • 2 pounds pork shoulder, thinly sliced
  • 1 pineapple, peeled and sliced
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1/4 cup achiote paste
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Corn tortillas
  • Fresh cilantro, chopped
  • Radishes, thinly sliced
  • Lime wedges

1. In a bowl, mix achiote paste, cumin, oregano, minced garlic, salt, and pepper to create a marinade.

2. Marinate the thinly sliced pork shoulder in the mixture for at least 2 hours or overnight for maximum flavor.

3. Heat a grill or grill pan over medium-high heat. Grill the marinated pork slices until cooked through and slightly charred.

4. Grill the pineapple slices for a few minutes on each side until they develop grill marks.

5. Warm the corn tortillas on the grill.

6. Assemble the tacos by placing grilled pork on each tortilla, topping with grilled pineapple, chopped onions, cilantro, and radishes.

7. Serve the tacos with lime wedges on the side for squeezing.

Get ready to savor the explosion of flavors in every bite of these Taco Al Pastor! Stay tuned for our next stop on the Flavor Fiesta as we continue to celebrate the diverse and delicious world of ethnic eats.
