Add fresh mint leaves, a pinch of salt, and chicken or vegetable broth. Blend until smooth, adding more broth if necessary to achieve a creamy consistency.

Once the lamb is cooked to your preference, remove it from the oven and let it rest for 5-10 minutes before slicing. Serve the Herb-Crusted Rack of Lamb with a generous dollop of Mint Pea Puree on the side, garnished with additional fresh mint leaves if desired.
