  • 2 lbs succulent shrimp, peeled and deveined
  • 1 cup chorizo, sliced
  • 1 large red bell pepper, diced
  • 1 large yellow bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1 red onion, finely chopped
  • 4 cloves garlic, minced
  • 1 cup frozen peas
  • 2 cups Arborio rice
  • 4 cups chicken broth
  • 1 cup dry white wine
  • 1 teaspoon saffron threads
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish


  1. In a small bowl, steep saffron threads in warm chicken broth and set aside.
  2. Heat olive oil in a paella pan over medium heat. Add chorizo and cook until browned. Remove chorizo and set aside.
  3. Sauté shrimp in the same pan until pink. Remove and set aside.
  4. In the pan, add more olive oil if needed and sauté garlic, red onion, and bell peppers until softened.
  5. Stir in Arborio rice, ensuring each grain is coated with oil.
  6. Pour in white wine and let it simmer until mostly absorbed.
  7. Add the saffron-infused chicken broth, smoked paprika, salt, and pepper. Stir gently.
  8. Arrange shrimp, chorizo, cherry tomatoes, and peas on top. Cover and simmer until rice is cooked and forms a crispy layer at the bottom.
  9. Once done, let it rest for a few minutes. Garnish with fresh parsley and serve hot.
