Ingredients

  • 9 lasagna noodles
  • 2 cups of marinara sauce
  • 2 cups of ricotta cheese
  • 2 cups of shredded mozzarella cheese
  • 1 cup of grated Parmesan cheese
  • 1 zucchini, thinly sliced
  • 1 yellow squash, thinly sliced
  • 1 cup of spinach leaves
  • 1 bell pepper, diced
  • 1 cup of sliced mushrooms
  • 1 onion, finely chopped
  • 3 cloves of garlic, minced
  • 1 tablespoon of olive oil
  • 1 teaspoon of dried Italian herbs
  • Salt and pepper to taste

Instructions

  1. Cook the lasagna noodles according to the package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the chopped onion and garlic, sauté until fragrant and translucent.
  3. Add the sliced mushrooms, bell pepper, zucchini, and yellow squash to the skillet. Cook until the vegetables are tender.
  4. Stir in the spinach leaves and dried Italian herbs. Cook until the spinach wilts. Season with salt and pepper to taste.
  5. Preheat your oven to 375°F (190°C).
  6. In a mixing bowl, combine the ricotta cheese, half of the mozzarella cheese, and half of the Parmesan cheese.
  7. In a baking dish, spread a thin layer of marinara sauce. Place three lasagna noodles on top.
  8. Spread half of the ricotta cheese mixture over the noodles, followed by half of the sautéed vegetables.
  9. Repeat the layers – marinara sauce, lasagna noodles, ricotta cheese mixture, and sautéed vegetables.
  10. Finish with a final layer of marinara sauce, the remaining mozzarella, and Parmesan cheese.
  11. Cover the dish with foil and bake for 25-30 minutes, or until the lasagna is bubbly and the cheese is golden and melted.
  12. Remove from the oven and let it cool for a few minutes before serving.
