  • 8 oz rice noodles
  • 2 tbsp vegetable oil
  • 1 cup tofu, cubed

  • 3 tbsp soy sauce
  • 2 tbsp tamarind paste
  • 1 tbsp brown sugar
  • 1/4 cup peanuts, crushed

  1. Boil rice noodles according to package instructions; drain and set aside.
  2. Heat vegetable oil in a wok over medium-high heat. Add tofu and stir-fry until golden brown; remove from the wok and set aside.
  3. Sauté garlic in the remaining oil until fragrant. Add broccoli and carrot, stir-frying until tender-crisp.
  4. Push vegetables to one side of the wok and pour beaten eggs into the other side. Scramble eggs until cooked, then mix with the vegetables.
  5. Add cooked noodles, soy sauce, tamarind paste, and brown sugar to the wok. Toss everything together until well combined.
  6. Stir in the cooked tofu and crushed peanuts. Cook for an additional 2-3 minutes.
  7. Serve Pad Thai noodles hot, garnished with fresh cilantro and lime wedges.
