Easy Sheet Pan Tandoori Chicken

Tandoori chicken is a beloved Indian dish known for its rich flavors and tender, marinated chicken. While traditional tandoori chicken is cooked in a clay oven called a tandoor, this recipe simplifies the process by using a sheet pan.

  • 4 boneless, skinless chicken breasts
  • 1 cup plain yogurt
  • 2 tablespoons tandoori spice mix
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • Salt and pepper to taste
  • 1 red bell pepper, cut into strips
  • 1 green bell pepper, cut into strips
  • 1 red onion, thinly sliced
  • 2 tablespoons vegetable oil
  • Fresh cilantro leaves for garnish

  1. In a bowl, combine the yogurt, tandoori spice mix, lemon juice, minced garlic, grated ginger, salt, and pepper. Mix well to create the marinade.
  2. Place the chicken breasts in a zip-top bag or a shallow dish and pour the marinade over them. Seal the bag or cover the dish and refrigerate for at least 1 hour, or ideally overnight, to let the flavors infuse.
  3. Preheat your oven to 425°F (220°C). Grease a large sheet pan with the vegetable oil.
  4. Remove the marinated chicken from the refrigerator and place it on the prepared sheet pan. Add the bell peppers and red onion slices around the chicken.
  5. Bake in the preheated oven for 25-30 minutes or until the chicken is cooked through and has a nice char on the edges.
  6. Garnish with fresh cilantro leaves before serving.
