  5. Wrap the puff pastry around the beef and seal the edges. Brush with the beaten egg for a golden finish.
  6. Transfer the Wellington to a baking sheet and bake for about 35-40 minutes or until the pastry is golden brown and the beef reaches your desired level of doneness.
  7. Remove from the oven and let it rest for a few minutes before slicing.
