  • 4 large bell peppers (any color)
  • 1 pound ground beef
  • 1 cup cooked rice
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1 cup shredded mozzarella cheese


  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes. Blanch them in boiling water for 3-4 minutes, then drain and set aside.
  3. In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
  4. Add the chopped onion and garlic to the skillet with the beef and sauté until softened.
  5. Stir in the cooked rice, diced tomatoes, dried oregano, dried basil, salt, and pepper. Cook for an additional 5 minutes.
  6. Stuff each bell pepper with the beef and rice mixture and place them in a baking dish.
  7. Sprinkle shredded mozzarella cheese on top of each stuffed pepper.
  8. Cover the baking dish with foil and bake for 25-30 minutes until the peppers are tender.
  9. Remove the foil and bake for an additional 5-10 minutes until the cheese is bubbly and golden.
  10. Serve hot and enjoy!
