Ingredients

  • 8 ounces of fettuccine pasta
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 1 cup heavy cream
  • 1/2 cup chicken or vegetable broth
  • 1/4 cup grated Parmesan cheese
  • Salt and black pepper to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Heat the olive oil and 1 tablespoon of butter in a large skillet over medium-high heat. Add the chopped onion and sauté until translucent.
  2. Add the sliced mushrooms and minced garlic to the skillet. Cook until the mushrooms are browned and tender. Season with salt and black pepper.
  3. Meanwhile, cook the fettuccine pasta according to package instructions until al dente. Drain and set aside.
  4. Stir in the remaining 1 tablespoon of butter, heavy cream, and chicken or vegetable broth into the mushroom mixture. Simmer for a few minutes until the sauce thickens.
  5. Add the grated Parmesan cheese to the sauce and stir until it’s well incorporated and the sauce is creamy.
  6. Toss the cooked fettuccine pasta in the mushroom and cream sauce until evenly coated.
