  • 8 oz rice noodles
  • 1 block firm tofu, cubed

  1. Boil the rice noodles according to the package instructions. Drain and set aside.
  2. In a large skillet, heat the sesame oil over medium-high heat. Add the tofu cubes and cook until they are crispy and golden brown on all sides. Remove from the skillet and set aside.
  3. In the same skillet, add a little more oil if needed and sauté the garlic until fragrant. Add the broccoli and red bell pepper and stir-fry until they are tender-crisp.
  4. Return the tofu to the skillet, and add the cooked noodles, soy sauce, and Sriracha sauce. Toss everything together and cook for a few more minutes to heat through.
  5. Remove from heat and garnish with fresh cilantro and chopped green onions.
