  • 8 rice paper wrappers
  • 1 cup cooked and shredded chicken breast
  • 1 cup cooked shrimp, peeled and deveined
  • 1 cup julienne-cut carrots
  • 1 cup thinly sliced cucumber
  • 1 cup fresh cilantro leaves
  • 1 cup fresh mint leaves
  • 1 cup cooked rice vermicelli noodles
  • 1/4 cup hoisin sauce
  • 1/4 cup peanut sauce


  1. Fill a large bowl with warm water. Dip one rice paper wrapper into the water for about 10 seconds until it becomes soft and pliable.
  2. Lay the softened wrapper flat on a clean surface.
  3. Place a small amount of each ingredient – shredded chicken, shrimp, carrots, cucumber, cilantro, mint, and rice vermicelli noodles – in the center of the wrapper.
  4. Fold the sides of the wrapper inwards and then roll it up tightly from the bottom, ensuring all the fillings are enclosed.
  5. Repeat with the remaining wrappers and ingredients.
  6. For the dipping sauces, mix hoisin sauce and peanut sauce separately in small bowls.
  7. Serve the spring rolls with the dipping sauces and enjoy!
